Lentil Spread
 

Home-made Naan Bread
So easy and so useful as bread dippers, for snacks or for pizza bases.

Ingredients
1 cup yellow lentils
4 cups water
1 vegetable stock cube
1 chopped onion
1 large potato, peeled and chopped
1/2 teaspoon cumin
1/2 teaspoon ground coriander
2 cloves chopped garlic

olive oil
juice of 1/2 a lemon

chopping board
sharp knife
peeler
medium saucepan
measuring cups
measuring spoons
hand blender
Ingredients
1 1/2 cups Self Raising Flour
1/2 cup wholemeal S R Flour
1/2 teaspoon salt (optional)
1 cup natural yoghurt
sesame seeds (optional)
water
Equipment
mixing bowl
wooden spoon
rolling pin
fry pan
spatula

Method
Rinse the lentils in cold water.
Place lentils, garlic, potato and onion in a medium saucepan with the stock cube and water.
Bring it to the boil.
Simmer for about 35 minutes until soft.
Add the spices and lemon juice and blend with a little olive oil until the spread is a smooth consistency.

Method
Mix into a dough in a large bowl with a wooden spoon.
If the dough is too dry, add water and if the dough is too sticky, add more flour.
Roll out with a rolling pin on a floured surface into about 10-15 cm circles to fit in the frying pan.
Fry in a light coating of vegetable or nut oil until lightly browned on each side.

 

Courgette and Pumpkin Muffins

 

Ingredients
2 cups Self Raising Flour
1cup grated pumpkin
1 cup courgette, grated
1 cup grated tasty cheese
30 gm butter, melted
2 eggs, lightly beaten
1 cup milk
1 teaspoon paprika
sesame seeds, for top if desired

 

Method
1. Preheat the oven to 200°C
2. In a mixing bowl combine the flour, paprika, cheese and grated vegetables.
3. In another bowl beat together the eggs, butter and milk.
4. Add this mixture to the dry ingredients.
7. Stir until just combined.
6. Spoon into large muffin tins.
7. Sprinkle with sesame seeds if desired.
8. Bake about 25 minutes. Check with a skewer.
